My Sweet Moment with Shangri-La Hotel Jakarta

Shangri-La Hotel Jakarta has always been one of AnakJajan favorite hotel in Jakarta. If you read our last blog post about Afternoon High Tea at Lobby Lounge – Shangri-La Jakarta you might know why we love it so much.

Since we have fallen in love with Shangri-La Hotel Jakarta, we immediately said yes when we received an invitation to spend a sweet afternoon at Shangri-La Hotel Jakarta. The sweet afternoon activity include cooking demo by Chef Frederic Scailteur and afternoon tea at Lobby Lounge (my favorite!!).

AnakJajan met Chef Frederic Scailteur, he is the new Executive Pastry Chef at Shangri-La Hotel.
Chef Frederic Scailteur has become a pastry chef since the age of 15. He has travelled and worked all around the world as executive pastry chef and executive pastry director.
Chef Frederic Scailteur even successfully achieved various prestigious achievements such as gold medal in Premier Patissier de Belgique (Best Pastry Chef of Belgium) competition, a gold medal for his Artistic Showpiece during Coupe du Monde de la Patisserie (The Pastry World Cup) in Lyon and a gold medal in Coupe d’Europe de la Pattiserie (European Pastry Cup) in Rome.

Chef Frederic Scailteur teach us how to make two menu, first one is Verrine Pineapple Raspberry Coco Crumble basically layers of crumble, fruit marmalade and cream cheese mixture and then the other one Rocher Almond Pistachio, nuts covered with white chocolate. All of the ingredients are easy to find and of course easy to make, so why don’t you give it a try and make your own Verrine and Rocher. Here’s the recipe and instruction.

Verrine Pineapple Raspberry Coco Crumble

Verrine Pineapple Raspberry Coco Crumble

Ingredients:
Sponge Cake
A. Crumble Coco
100gr flour
100gr butter
100gr icing sugar
50gr almond powder
50gr dried shredded coconut
B. Fruit Marmalade
1/4 fresh pineapple
150gr raspberry
2 cup of orange juice
C. Cream Cassandra
200gr Philadelphia cream cheese
40gr puree of mango
40gr puree of raspberry
1 vanilla bean
35gr powder sugar

Instruction:
A. Crumble Coco
1. Mix well all of the A ingredients, and then bake until crunchy and browned.
B. Fruit Marmalade
2. Sautee pineapple and raspberry over medium-high heat, add orange juice and cook with medium heat until it thickened. Chill it inside chiller.

C. Cream Cassandra
3. Soften cream cheese with spatula.
4. Add vanilla and sugar, and half of mango puree, mix well.
5. Add the remaining mango puree, mix well.
6. Add raspberry puree and mix well and put it inside piping bag.

6. Slowly assemble all of the ingredients in a cup starting with fruit marmalade on bottom, sponge cake, coco crumble and then cream cassandra.

Pretty and easy to make isn’t it? If you don’t like pineapple or raspberry, you can also substitute it with other fruits such as orange, blueberry, strawberry, etc.

Rocher Almond Pistachio

Ingredients:
250gr roasted chopped almond
100gr pistachio
100gr sugar
40gr water
1/2 vanilla bean
25gr cocoa butter
250gr white compound chocolate

Instruction:
1. Boil sugar, vanilla bean and water over medium heat to create sugar caramel. Do not stir it because the sugar will become crystallized.
2. Lower the heat when the sugar start to browned.
3. Add almond and pistachio and quickly mix it well.
4. Remove from the heat, immediately add cocoa butter and mix well.

5. Put it on a flat surface and let it cool.
6. Melt white chocolate and then mix it with nuts.

7. Put it into the mold and refrigerate.

Aside from almond and pistachio, you can substitute the ingredients with other types of nuts, you can also add dried fruit if you like it.

Besides watching the cooking demo, we also get a chance to try cooking our own Verrine and Rocher. It was super easy to make, AnakJajan team up with Verdi from Hungry Doctor and we finish cooking it in no time. This is the result, not bad isn’t it??

As mentioned earlier, AnakJajan love the food and ambiance at Shangri-La Hotel Jakarta, but there is one more thing that we love, we love to see the team work, solidarity and familial atmosphere of the Shangri-La team. Everyone had so much fun and a great time both participants and Shangri-La team that day.
